Another Wild One: Introducing Paige, our Assistant Brewer
Since you continue to drink our beer faster than we can make it, we’re now lucky enough to add Paige Latham Didora to the Wild Mind team as an assistant brewer!
A St. Louis Park native, Paige is no newcomer to the beer industry. She previously helped with sales and beer education at The Four Firkins bottle shop and most recently worked as the education specialist/bartender/occasional tour guide at Modist Brewing. Notice a trend? Paige is about all things beer nerdery and brings a wealth of knowledge to Wild Mind.
“After enjoying several trips to Wild Mind, I ran into Mat, the head brewer, for the first time,” Paige says. “He uttered two words — Brettanomyces re-esterification — and I was reminded again of the fine balance that is art and science in brewing. Wild Mind has that balance.”
Paige’s beer career began in writing. She started a blog to document her travels through Wisconsin breweries, and she also contributes to Heavy Table as a staff writer. Wanting to know more about the brewing process, Paige joined an all-ladies homebrew club, Bitches Brew Crew, which now boasts several members who are brewing professionally.
Of all the beers she’s tried (and there have been plenty), Paige’s favorite remains a good German altbier. Maybe you’ll see one on tap sometime soon as she begins making her mark on the brewhouse.
“I’m excited to make an infusion or brew a beer with pink peppercorns,” Paige says. “I had a fantastic saison made with peppercorns years ago in Montreal, and I'll never forget it!”
While she isn’t obsessing over the finer points of beer you might find Paige kayaking on the river, tending to her vegetable garden, or out on a reluctant jog with a club that runs to a donut shop each Saturday morning. (Because donuts are worth it.) An accidental cat-owner, Paige is a dog-person to her core and is looking forward to working in a dog-friendly brewery.
We’re excited to have Paige on board and anxiously await all of the great beers she’ll be able wild, sour, and funky beers she’ll create. Her obsessive quest for quality and creative spirit will fit in perfectly at Wild Mind.
