WHAT IS traditional KÖLSCH service?

We serve our Kölsch in the traditional fashion using a small, 2L glass called a Stange that is placed into a kranz tray or wreath and brought to you table-side by one of our kübes (servers). Due to the stange being a smaller serving size glass, the beer remains cold by the time you're ready for your next serving! When your glass is empty, our team of kübes walk amongst the aisles with kranz trays filled with fresh kölsch and immediately replace it with a full one at your table so there is no need to go back to the bar to order, the kübes leave a mark on your coaster to keep track of your tab. Once you've had your fill, place your coaster on top of your glass to signal to the team that you're all done and when you’re ready to leave, bring your coaster to bar to close-out your tab.

WHAT IS KÖLSCH BEER?

Kölsch is a German pale ale brewed in and around the city of Cologne (Köln). This top-fermented beer uses an ale yeast, noble hops, and light pilsner malt. The beer is fermented at warm temperatures to impart a fruity aspect, then spends a few weeks at colder temperatures, a method used in lagers. This duality means kölsch is often considered a hybrid beer. The cold temperatures give kölsch a crisp, dry quality while the ale yeast contributes some fruity and bread-like aromas and flavors not normally found in lagers. The history of kölsch beer goes back to the year 874 AD.

Our Kölsch Service Covered

Our Traditional Kölsch Service has been covered by media near and far. We even held one when the Craft Brewers Conference came to Minneapolis in May 2022 and helped introduced this type of taproom service to 1000’s of brewers and taproom GUESTS - it’s been fun to watch the movement grow!
